SOUTHERN THAI FOOD | Local Recipes from Homestay Mum Ja Day

Do you love Thai Food? Or are you curious about new dishes and local food from around the world? Then this article is right for you! You will learn how to cook Green Curry, Shrimp Bomb and Stir Fried Sweet and Sour Sauce, explained to you by Ja Day, our homestay Mum from the Andaman coast in Thailand.

Travellers can go to her humble house and stay with her in the village of Ban Tale Nok. She has been hosting guests since 2008 and she takes deep pride in her Southern Thai Cooking. Her greatest joy is when guests say that they like her cooking or when they are so full, they cannot eat anymore! She lives with her Husband Bang Hem who is the homestay coordinator, and her three children.

The curries and stir-fried dishes on this article is great to eat with plain rice, a staple in Thai food! As you can see, there are not measurements for the recipes. When cooking, Thai women will add small amounts and continuously taste, adding more of something until they think it is delicous. This also makes tasting Thai food fun, because no two dishes will taste the same.

Thai Green Curry...


  • Chicken, Beef or Shrimp

  • Green curry paste

  • Eggplant

  • Coconut milk

  • Sweet basil

  • Green chili, red chili

  • Salt

  • Kaffir lime leaves

  • Sugar

How to cook

  • Boil coconut milk and then add green curry paste. Stir until curry paste dissolves

  • Add chicken, beef or shrimp, bring to a boil and then add the eggplant. Keep boiling until meat is cooked and eggplant is soft

  • Season with salt and sugar

  • Before turning off heat add sweet basil, green/red chilli and kafir lime leaves. Stir and turn off heat

  • Ready to serve

Stir fried sweet & sour sauce with….


  • Chicken or Sea foods

  • Chopped Garlic

  • Pineapple

  • Cucumber

  • Onion

  • Green chili, Red chili

  • Spring onion

  • Tomato and tomato sauce

  • Chili sauce

  • Salt, Fish sauce, sugar

How to cook

  • Stir fry garlic in oil until golden brown and smells delicous

  • Add Chicken or Sea food and then Pineapple, Cucumber, Onion, Green chili, Red chili and stir fry together until everything is soft

  • Add the tomato sauce, chili sauce, salt, sugar and fish sauce and a bit water, stir together and then add tomato and spring onion, cook on low heat briefly

  • Ready to serve

Shrimp Bomb


  • Chopped Shrimp

  • Boiled corn Kernels

  • All purpose flour

  • Egg

  • Pepper

  • Chopped Garlic

  • Chopped Coriander root

  • Oyster sauce

  • Soy sauce / fish sauce

How to cook

  • I like to start with the flour, egg and add some water to get the base for the batter. Then add all the other ingredients and stir together. Then roll into small, tight balls.

  • Deep fry the small balls in oil on medium heat until it has a golden brown color Serve with tomato sauce or plum sauce

  • Ready to serve
